Pumpkin Pancakes – A Great Winter Breakfast in Eureka Springs

A popular favorite here at the Bridgeford House for breakfast is Pumpkin Pancakes:

2 cups flour
2 TB firmly-packed brown sugar
1 TB baking powder
1 tsp salt
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1-1/2 cups milk
1/2 cup solid pack pumpkin
1 egg, slightly beaten
2 TB oil

Preheat griddle to 375. In large bowl, combine dry ingredients; mix well. In separate bowl, combine remaining ingredients. Add to flour mixture, stirring until just moistened (batter will be very thick).

For each pancake, pour 1/4 cup batter onto hot griddle. Using a spatula, spread batter into a 4-inch circle before mixture sets. Cook until surface bubbles and appears dry. Turn; continue cooking 2 to 3 minutes. Serve warm with butter and syrup.

Yield:  16 pancakes

Chicken & Cheese Lasagna Roll-ups – It’s What’s for Dinner!

Instead of a breakfast recipe, how about a great dinner dish this time? Enjoy!

3 cups chopped or shredded chicken*
1 cup Ricotta Cheese
1/4 cup crumbled Feta Cheese
1/4 cup grated Parmesan Cheese
1/4 cup milk
1/8 tsp white pepper
8 lasagna noodles, cooked and drained
2 cups Spaghetti sauce (I make my own but you can use store-bought)

In medium bowl, combine chicken, cheese, milk and pepper. Spread 1/2 cup mixture on each lasagna noodle; roll jelly-roll fashion. In a 9- by 13-inch baking dish, spread 1 cup spaghetti sauce. Arrange lasagna rolls, seam-side down in sauce in baking dish. Top with remaining sauce. Cover and bake at 375 for 30 minutes or until hot.

*Shredded chicken ahead of time:

Put 3-4 chicken breasts in crock pot with 1/2 cup of water, 1/2 tsp salt, 1/2 tsp pepper and a 1/2 tsp garlic powder. Cook on low at least 3-4 hours, until tender and falling apart. Fork apart – can divide into freezer bags and keep for future use.

2013 Winter, New Year’s and Valentine’s Specials

Well, it’s finally starting to wind down, the hustle and bustle, the concerts and car weekends, Bikes, Blues and BBQ – you name it, Eureka Springs has it. Bikes, Blues and BBQ

Lodging in Eureka Springs AR

Yep, they’re coming! It’s time for Bikes, Blues and BBQ over in nearby Fayetteville, AR. The event is Sept. 26-29 and has something for everybody at this motorcyclist’s enthusiast’s dream weekend, including more music than you can even stand listening to. Weather looks to be excellent, with cool nights and warm days – just like we like it here in NW Arkansas! Now folks in the know realize that B, B and BBQ is fun to do, but you really want to stay in Eureka Springs during that weekend – and may have already found out there’s nothing left in lodging by now over there anyway. Best places to ride is around Eureka Springs, just 45 minutes away from Fayetteville, so make your plans now to stay here. We have plenty of rooms and plenty of parking. There’s a Motorcycle Arts Show at the Best Western Inn of the Ozarks Convention Center and our great biker-friendly gorgeous historic downtown to visit. You can only do so much around Dickson Street in Fayetteville, but tons of stuff to do over here in Eureka Springs, so ride on over!

Our Original Murder Mystery Story Returning in September

We have a new date set for an upcoming Murder Mystery weekend and already half our rooms are booked ! September 7 & 8th, 2012, we will again feature our very first story, The Conrail Affair. This has always been our favorite story and originally debuted in April of 2005.

Murder Mystery Weekend in Eureka Springs, AR

As many of you know, innkeeper Jeff Feldman has written all four of our Murder Mysteries stories. He has always tried to write a story that stems from something in Eureka’s past and the Conrail Affair is certainly no different. This story is based on the arrival of the railroad in Eureka Springs, set in 1905. (The railroad actually arrived in 1883, but we like to take a certain license with the story to make things fun.)

While the railroad opens up the world to Eureka Springs,
its coming is not without controversy. There are several city groups and individuals opposed to the coming of the railroad: A conservationist group concerned that the railroad will spoil the natural beauty of the area, a reactionary group opposed to progress and technology in general, a women’s temperance group against the threat of saloons that might arise from increased travel, six property owners that lost ownership of parcels of land to eminent domain for the rail right-of-way, and three individuals who claim to have been cheated when selling their land. Then there are the greedy and covetous friends and relatives of Mr. Cyrus K. Conrail, a man who would never describe himself as a paragon of virtue and civility, much less be described as such by his family, friends, and business associates.

So, as you can see – it becomes very interesting! The Conrail Affair is one of our favorites partly because of the chance to wear the more elaborate Victorian costumes that people actually wore back then. The narrow, winding streets, flowering parks, fabulous restaurants, spas, art galleries & specialty shops will definitely enhance your one-of-a-kind and unforgettable weekend. So there’s a little murder involved – so what?

As with all of our MM weekends, the mystery is broken up into three rounds. Round 1 is Friday night, which features a cocktail party-like atmosphere and heavy appetizers (enough for a meal!). Round 2 is late Saturday morning (after your full breakfast at the B&B) and features coffee, tea and breakfast dessert (we promise you will never go hungry during this weekend!). After Round 2 you have all afternoon to yourselves to nap or  go downtown and shop and – oh, yeah – we have clues for you to hunt for! Kind of like an intelligent scavenger hunt. Then Round 3 is Saturday evening with a full buffet dinner and dessert.

Murder Mystery in Eureka Springs, ARNo one else in Arkansas does these Murder Mysteries – certainly not like we do. So call today – you can’t book these online – to get your room booked for September 7 & 8th. You’ll be glad you did.

Buttermilk Pie

Okay, we don’t normally have pie for breakfast here at the Bridgeford House (although we probably would if you asked!), but we wanted to share this awesome (and easy) pie recipe that we bake all the time for the holidays:

Buttermilk PieFood at the Bridgeford House Bed and Breakfast

1 (9-inch) pie shell, unbaked
1/4 cup butter
2 cups (scant) granulated sugar
3 (rounded) TBs all-purpose flour
3 eggs, slightly beaten
1 cup buttermilk
1 tsp vanilla
Nutmeg to garnish surface of pie

Preheat oven to 350 degrees. Let eggs and buttermilk come to room temperature.

Cream butter and sugar; add flour, then eggs. Stir in buttermilk and vanilla, beating until smooth. Pour into unbaked pie shell; sprinkle top of pie with nutmeg. Bake 45 to 50 minutes until pie tests done when the tip of a knife is inserted in center; knife should come out clean.

Top 10 Myths About Staying at a Bed and Breakfast

Many folks out there have never stayed at a bed and breakfast because, well…they’re scared! So we want to debunk any preconceived ideas you may have about staying at a B & B:

1.  You have to share a bathroom. Maybe in Europe, but in the United States, that’s pretty much a thing of the past. In fact, quite often B&B bathrooms are luxurious with jetted tubs and separate showers. We also provide fluffy towels, hair dryers, makeup mirrors, glycerin soap and conditioning shampoo. (We have had people ask us if they need to bring their own sheets and towels! Uh…no.)

2.  I don’t want to have a curfew and have a bunch of rules. We have one basic rule here: have a good time! We do not care what time you come in – you are provided your own key and front door code. We are not your mama!

3.  But there’s no privacy! We guarantee you will have more privacy here than you will at a hotel and it’s much quieter, too. Each of our rooms are separated from each other so it’s rare if you even hear other folks. After we check you in and make sure you know how to reach us if you need anything at all, including giving you our cell phone number, we leave you alone – unless you want to visit and lots of folks like to.

4.  But you have to eat with a bunch of strangers! All B&Bs are different, but in our case, we do have one large table and one 9:00 a.m. seating. We are always happy to serve you in your room if you prefer, but we rarely have anyone ask because getting to know other folks is fun and interesting – and we always make sure we laugh a lot at breakfast!

5.  The innkeepers are going to be hovering around us to make sure we don’t mess up their stuff. Yes, this is our home but it’s primarily our business. We have faith in people (and have rarely been proven wrong) to be respectful of our property and we never hover – we make sure you can find us if you need us, but sometimes we don’t see folks at all except during breakfast (and sometimes not even then, if they choose to sleep in).

6.  All B&Bs are old, creaky houses with Grandma furnishings. B&Bs nowadays can come in all shapes and decors. There are many modern B&Bs, log home B&Bs, traditional B&Bs and, as ours is, Victorian B&Bs. So while you might expect ours to have tons of doilies, nope, not the case. While we do have some lovely antique furniture that befits our 130-year-old house, we have upscale furnishings, decor and bedding. We provide flat-screen TVs, iPhone docking stations/ alarms, free Wi-Fi, refrigerators and microwaves in the rooms.  We even have electricity! (Little joke there…).Relax in Eureka Springs Arkansas

7.  B&Bs don’t accept credit cards. Not only do we accept credit cards, that’s the majority of our business.

8.  Innkeeping is just a hobby for them. Unless it’s a very small B&B, 1 or 2 rooms, most B&Bs, including ours, are our business. We make it our 7-days-a-week job to take care of you and make sure you have a wonderful stay. We’re not out just putzing around some place while you’re here – 90% of the time we are right on the premises and if we’re not due to necessity, we make sure you can reach us.

9.  Innkeepers aren’t on site, so there’s no 24/7 front desk. You’re right, we don’t have staff on 24/7, however, we live here! In Eureka Springs, it’s the law that innkeepers live on site and that’s true of most B&Bs around the country, even if it’s not a requirement – it’s what makes a B&B a B&B and not a hotel or motel! That’s the whole point of a B&B, to have it seem like home with someone right there to take care of your needs, but to be unobtrusive.

10. B&Bs are expensive. B&Bs are very comparable to many hotels and, trust me, we provide much, much more for the price! Most hotels will nickel and dime you to death with their charges, but we provide not only a large 4-course breakfast with your rate, but cold soft drinks and waters in your fridge, coffee pot and microwave in your room, along with coffee, tea, popcorn and cocoa. We make sure you have utensils to use, wine glasses, drinking glasses and a corkscrew, just in case. We have games and puzzles and videos. We have chocolates all over the house and do homebaked treats for you each afternoon that we place on your bed as we do maid service. What hotel does all that?

So tell your friends, tell your relatives, send this to all the folks you know that would never stay at a bed and breakfast because they’re “too old-fashioned and stuff”. Send ‘em here – we’ll change their minds.

B and B’s – A Better Way to Stay

There have long been many myths surrounding bed and breakfasts and what they may be like. In order to combat that, Professional Association of Innkeepers International (PAII) has launched a campaign known as “A Better Way to Stay” – or any other words, “Death to the Doily”!

While you might find one (or maybe even two) doilies at the Bridgeford House, you will also find updated and luxurious private bathrooms, all with showers and some with jetted tubs (big enough for two!), 26″ flatscreen TVs with built-in DVD player (and a big selection of up-to-date movies), refrigerators, microwaves and coffee pots in every room (you never have to leave your room if you don’t want to, since we also supply you with coffee, tea, popcorn, cocoa and home-baked treats) AND a huge homemade breakfast served on fine china and gold flatware.

We also have FREE Wi-Fi, iPhone/iPod Docking Alarm Clocks, luxurious linens, soft and fluffy towels, gorgeous views, easy access to the historic downtown (either by feet or by trolley) and we’re on site and available for when you need something we didn’t think to provide for you ahead of time – and we’ll remember your name! How many hotels (let alone a motel!) can give you that?

So spread the word – B and B’s really ARE A Better Way to Stay – follow them on Twitter and Facebook and keep up-to-date with current news and promotions on what the B&B industry has to offer. Don’t believe those myths – because we’ve blown them away!

Take Part of the Bed and Breakfast Experience Home With You

If anyone has stayed at the Bridgeford House Bed and Breakfast in the last couple of months, you’ll have slept on our brand new sheets from Comphy Co.

These linens look and feel like 600 count cotton, yet they are an eco-friendly micro-fiber that is 100% recyclable. They dry quickly, do not need ironing (very important to this girl!) and are treated for stain release.
