Try Something New for Breakfast – Cheese Blintzes

Cheese Blintzes

Cheese Blintzes from Bridgeford House Bed and Breakfast

Crepe Batter:
2 TB salad oil
2 eggs
1 cup milk
3/4 cup sifted flour
1/2 tsp. salt
(makes 6-7 crepes)

Cheese filling:
1/4 pound cream cheese
2 egg yolks
1/4 pound cottage cheese
2 TB sugar
1 tsp. vanilla
(makes enough filling for 6-7 crepes)

Beat eggs, oil, and milk. Add flour and salt, beating until very smooth. Chill 30 minutes; it should be like heavy cream. If too thick, add a little milk. Grease hot skillet with light coating of butter. Pour 3 to 4 tablespoons of batter into the skillet, turning pan to coat it. Fry lightly on one side. Repeat with remaining batter. Stack crepes on waxed paper, brown side up.

Beat filling ingredients together until smooth. Fill each crepe with 2 heaping tablespoons of filling, fruit or seafood, and roll up egg style by folding in sides of crepe over filling. May be frozen at this point, then fried without defrosting. Melt 2 tablespoons butter over medium heat in large skillet. Fry crepes until golden brown on all sides.

May Festival of the Arts in Eureka Springs

By far our absolute FAVORITE festival in Eureka Springs, AR, is May Festival of the Arts.

The first weekend starts out with one of our favorite events, the ARTrageous parade, Saturday, May 4th (2:00 p.m. – bright, colorful, loud and joyful!). Tied for first place in favorites is the 23rd Annual White Street Walk on Friday, May 17th, from 4 to 10 p.m. The entire street becomes a street fair, with resident artists opening up their homes to guests (lots of free food and wine provided by these wonderful hosts) and there are more than 40 street exhibits as well from other artists, displaying and selling art in the form of weaving, watercolors, jewelry, oils, pottery, stained glass and much more.

Sunday, May 19th, you will find Books in Bloom attracting crowds at the Crescent Hotel (just a few steps up the hill from the Bridgeford House). From noon until 5, you can meet and listen to such well-known authors as Catherine Coulter, James Grippando, and Craig Johnson (he of the A&E “Longmire” mystery series, a favorite of ours) and many others. Again – one of our favorite events – how can we have so many?

These are only a few of the major events going on during the weekends, but there are true artist events and showings during every day of the week in May. May is a beautiful month to visit our lovely little town in the Ozarks, so make your plans today!

Cheesecake Crescent Rolls

Tried this new recipe recently at our Bed and Breakfast and it was awesome! It’s a keeper:

2 cans of Pillsbury Crescent rolls
2 (8oz each) package cream cheese, softened
1 cup sugar
1 1/2 tsp vanilla
1/4 cup butter, melted
cinnamon
sugar

Unroll and spread 1 of the cans of crescent rolls on the bottom of a 9 x 13 baking dish (or 8 x 8 if you want to cut the recipe in half). Combine softened cream cheese, 1 cup sugar, and vanilla. Spread over crescent roll layer. Unroll and layer remaining crescent rolls over cream cheese layer. Melt your butter and spread over top of crescent rolls. Sprinkle generously with cinnamon and sugar.

Bake for 20-30 minutes in 350 degree oven until bubbly and slightly browned. Drizzle with a little honey if you like. Let cool a bit, slice and eat.

We have a new store in town with an interesting new concept – they sell olive oils and balsamic vinegars, set up in tasting stations! And you would not believe the flavors they offer!

Fresh Harvest has an amazing amount of information on their website, so be sure to check it out. (You can, of course, order product directly off the site and have it shipped to you, although we’d certainly rather you visit Eureka, and stay with us to check it out first hand.) But basically, they feature one of the largest, freshest selections of Ultra Extra Virgin Olive Oils, fused and infused Olive Oils and aged balsamic vinegars on tap in the USA. They work with folks that have been in the olive oil business for nearly 100 years and Fresh Harvest is able to work with farmers in both hemispheres to deliver the highest quality product, all year long.

Keels Creek Winery

You don’t have to go far to find a world-class winery – we have one right here inside the city limits of Eureka Springs, AR. Keels Creek has a beautiful retail wine sales facility in a Spanish-style building, which also houses their Keels Creek Art Gallery. They also have a wine tasting room and most recently have expanded their wine production facility right behind the sales building, now open to visitors on their wine tours.

These are award-winning wines, so well worth the trip to do some tasting – we even have a package that includes a wine tasting for two (the Fun, Food & Wine package debuting in March, which also includes dinner out and tickets to the Intrigue Theater). They currently produce about eight reds, three whites and a couple of blush varieties. They intend to keep the winery as a boutique winery, small and friendly, using local grapes harvested from their own vineyard and 3 other local vineyards.

Keels Creek is open every day of the year, except Christmas, I think, so it doesn’t matter what season you come, you can always enjoy a good glass of wine. Come see us!

Pumpkin Pancakes – A Great Winter Breakfast in Eureka Springs

A popular favorite here at the Bridgeford House for breakfast is Pumpkin Pancakes:

2 cups flour
2 TB firmly-packed brown sugar
1 TB baking powder
1 tsp salt
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground ginger
1-1/2 cups milk
1/2 cup solid pack pumpkin
1 egg, slightly beaten
2 TB oil

Preheat griddle to 375. In large bowl, combine dry ingredients; mix well. In separate bowl, combine remaining ingredients. Add to flour mixture, stirring until just moistened (batter will be very thick).

For each pancake, pour 1/4 cup batter onto hot griddle. Using a spatula, spread batter into a 4-inch circle before mixture sets. Cook until surface bubbles and appears dry. Turn; continue cooking 2 to 3 minutes. Serve warm with butter and syrup.

Yield:  16 pancakes

Easy enough to make for yourselves but we’ll be happy to do it here for you!

9th Annual Chocolate Lovers’ Festival

It’s time for all chocolate lovers to unite! February is a great time to visit Eureka Springs and Saturday, February 9th, would be a great day to pick. The 9th Annual Chocolate Lovers Festival will take place at the Inn of the Ozarks Convention Center, from 9 a.m. to 3 p.m.

chocolateAdmission is $12 for adults and is well worth the price. Items for sampling (and taking home in your little box included in the price of the ticket) include cakes, cookies, ice cream, multiple dipping fountains, beverages and my personal favorite, chocolate covered strawberries! And much, much more.

chocolate strawberriesThere will be judging for the Best Decorated Cake, Best Dessert and Best Candy for professionals and other categories such as Best Decorated Cake and Most Creative Dessert for amateurs. There is even a Amateur Youth Division.

But…the best part of the whole thing is… yep, eating chocolate. Mounds and mounds of it. Take Tums with you.

And, yes, technically you can walk to this one from our inn, but you may not be able to walk home. There is plenty of parking at the convention center, for free! And if you can’t make it to Eureka for that weekend but want to celebrate Valentine’s with your loved one, don’t forget we are running a 3-day special here at Bridgeford House:  book the 14th, 15th, and 16th (Thursday, Friday and Saturday) and receive the 3rd night free AND your own little box of local chocolates AND a free wine tasting at Keel’s Creek Winery. Either weekend is SWEET!

Chicken & Cheese Lasagna Roll-ups – It’s What’s for Dinner!

Instead of a breakfast recipe, how about a great dinner dish this time? Enjoy!

3 cups chopped or shredded chicken*
1 cup Ricotta Cheese
1/4 cup crumbled Feta Cheese
1/4 cup grated Parmesan Cheese
1/4 cup milk
1/8 tsp white pepper
8 lasagna noodles, cooked and drained
2 cups Spaghetti sauce (I make my own but you can use store-bought)

In medium bowl, combine chicken, cheese, milk and pepper. Spread 1/2 cup mixture on each lasagna noodle; roll jelly-roll fashion. In a 9- by 13-inch baking dish, spread 1 cup spaghetti sauce. Arrange lasagna rolls, seam-side down in sauce in baking dish. Top with remaining sauce. Cover and bake at 375 for 30 minutes or until hot.

*Shredded chicken ahead of time:

Put 3-4 chicken breasts in crock pot with 1/2 cup of water, 1/2 tsp salt, 1/2 tsp pepper and a 1/2 tsp garlic powder. Cook on low at least 3-4 hours, until tender and falling apart. Fork apart – can divide into freezer bags and keep for future use.

EurekaGras Mardi Gras!

You can’t find a better MardiGras celebration north of New Orleans than what we produce right here in Eureka Springs! Organized by tried and true New Orleans transplants, EurekaGras is the real thing, with an activity-packed schedule, from January 5th to February 12th, 2013.

This is truly a New Orleans style Mardi Gras setting in the beautiful Ozarks within the Downtown area of Eureka Springs, Arkansas. This event, in its seventh year, has grown phenomenally and is now deep rooted in the Victorian Town with up and down curly-Q streets. The Krewe of Krazo, OZARK spelled backwards, welcomes visitors and locals -” Laissez les bon temps Rouler”, Let the Good Times Roll!
