EurekaGras Mardi Gras!

You can’t find a better MardiGras celebration north of New Orleans than what we produce right here in Eureka Springs! Organized by tried and true New Orleans transplants, EurekaGras is the real thing, with an activity-packed schedule, from January 5th to February 12th, 2013.

This is truly a New Orleans style Mardi Gras setting in the beautiful Ozarks within the Downtown area of Eureka Springs, Arkansas. This event, in its seventh year, has grown phenomenally and is now deep rooted in the Victorian Town with up and down curly-Q streets. The Krewe of Krazo, OZARK spelled backwards, welcomes visitors and locals -” Laissez les bon temps Rouler”, Let the Good Times Roll!
If you like to party, love to watch people, and just generally love to have a good time, plan a visit to Eureka Springs during one of these MardiGras events. You can walk to almost everything from our place!

The 6th Annual B&B Sweet Treats Cookie Tour

Polish up your sweet tooth because it’s that time again – the annual holiday Sweet Treats Cookie Tour is coming, Saturday, December 8th, 1 p.m. to 6 p.m. Sponsored by BABIES (Bed and Breakfast Inns of Eureka Springs), of which we are a proud member, this event includes a tour of all nine inns of the organization (all dressed to the nines – get it? – for the holidays), as well as samples of the two treats that are baked at each inn, especially for you.

Eureka Springs Food and Wine Festival-2012

If you’re in the area this next week, November 7-11th, come join us for the Food and Wine Festival!

Enjoy fabulous wines and exceptional food at some of Eureka’s finest restaurants:  DeVito’s, The Grand Tavern, Cottage Inn, Garden Bistro, and Ermilio’s, just to name a few. You can also enjoy special events such as winery tours and tank tasting, French cuisine cooking classes, special art showings, and an open house at Eureka’s newest winery, Railway Winery.

This is truly a unique weekend festival in beautiful Eureka Springs, Arkansas, when the weather is gorgeous (and right now there is still tons of fall color left on the trees!), there is food and plenty of wine to be consumed, and it’s close enough to Christmas to start shopping! Fall Food – Apple Pie!

Well, we can’t quit thinking about food, with a gorgeous (and extremely busy!) fall upon us, we keep thinking about eating and most particularly today, about pie. We have a busy Thanksgiving weekend coming up here at the B&B and we’re thinking we will have several pies cooked for our guests to enjoy while they are here – and my favorite is this version of the great American Apple Pie, which I saw on Good Morning America years ago:

Crunchy Caramel Apple PiePie at the Bridgeford House Bed and Breakfast, Eureka Springs, Arkansas

 

Ingredients:

1 pastry crust for a deep-dish pie 9-inch

1/2 cup sugar

3 tb all-purpose flour

1 tsp ground cinnamon

1/8 tsp salt

6 cups thinly sliced, peeled apples

1 recipe crumb topping (see below)

1/2 cup chopped pecans (optional)

1/4 cup caramel topping

 

Ingredients for Crumb Topping:

1 cup packed brown sugar

1/2 cup all-purpose flour

1/2 cup quick cooking rolled oats

1/2 cup butter

 

Directions for crumb topping:

 

Stir together brown sugar, flour, rolled oats.

Cut in 1/2 cup butter until topping is like course crumbs. Set aside.

 

Pie Directions:

In a large mixing bowl, stir together sugar, flour, cinnamon and salt.

Add apple slices and gently toss until coated.

Transfer apple mixture to the pie shell.

Sprinkle crumble topping over apple mixture.

Place pie on cookie sheet so the drippings don’t drop into your oven.

Cover edges of pie with aluminum foil.

Bake in a preheated oven 375 degrees for 25 minutes. Then remove foil and put back in for another 25 to 30 minutes without foil.

Remove from oven. Sprinkle pie with chopped nuts and drizzle with heated caramel sauce on top.

Cool on a wire rack and enjoy warm or at room temperature.

Remember the “secret season” in Eureka Springs, late fall and winter, when the crowds are gone and the fireplaces are lit here at the Bridgeford House. Come for Thanksgiving and come eat pie!

Blackberry Biscuit Cobbler

Fall is here! If you were in Eureka Springs this past weekend, you would have had your heavy jacket on and carried your umbrella (just in case) and got to watching the trees start to really turn red in earnest. The heat’s been turned on and the fireplaces lit. So how ’bout a nice warm breakfast recipe to try? If you can’t get here, then try this at home:

Breakfast at the Bridgeford House Bed and Breakfast Eureka Springs AR

 

Blackberry Biscuit Cobbler

Biscuit dough:
3 cups all-purpose flour
4 tsp sugar
4 tsp baking powder
1 tsp salt
2 cups whipping cream

Cobbler:
1 cup sugar
2 TB cornstarch
1/4 cup water
2-16 ounce packages of frozen or fresh berries (6 cups)

In a large bowl stir together flour, sugar, baking powder, salt and whipping cream with a fork until well combined. Set aside.

In a large saucepan combine 1 cup sugar, 2 TB cornstarch, and 1/4 cup water. Stir in 6 cups (two 16-ounce) packages) fresh or frozen blackberries (or raspberries or cherries). Cook and stir over medium heat until thickened and bubbly. Divide mixture amount eight (could stretch to 10) ramekins. Drop 1 or 2 mounds of batter on top of each.

Bake at 375 degrees for 25 to 30 minutes or until topping is golden brown and mixture is bubbly. Makes 8-10 servings.

This is a favorite among guests, so if you’d rather us make it, we’ll be happy to! Come see us!

Thai House Restaurant – New in Town!

I have never been a big fan of Thai food, although I like other Asian food. Just the ones we had tried back in Dallas didn’t do anything for me. But we have eaten three times here in the last two weeks since this new restaurant has opened up, the Thai House Restaurant on Hwy 62. The food is awesome and it’s so nice to have another great restaurant in our little burg.

New Restaurant in Eureka Springs, ARThey have an extensive menu with everything from appetizers, noodles, curry, beef, pork and seafood to soups and salads. My absolute love is Fried Pork Dumplings (ground pork with Thai herbs) served with a wonderful homemade dumpling sauce, in the photo. My entree favorite, currently, is Lad-Na (Crispy egg noodles topped with carrots, onions, fresh mushrooms – which I have them leave out, not a fan – and broccoli in a garlic brown sauce. That sauce is to die for!

We have also had Teriyaki Beef (I eat off of Jeff’s plate, shamelessly), Cashew Nut chicken, Ginger chicken, and another appetizer: the Summer Rolls (rice paper wrapped with lettuce, bean sprouts, chicken, fried eggs and served with a sweet creamy sauce & ground peanuts). We have had fellow innkeepers that are big fans of the Pan Thai (stir-fried rice noodles with eggs, bean sprouts, green onions and topped with ground peanuts) and Evil Jungle Prince (choice of meat sauteed in red chili paste, coconut milk, bamboo shoots and basil, served on a bed of chopped cabbage). As you can see, reading the menu is half the fun!

Be sure and try them the next time you stay with us – no, you can’t walk to this one, unfortunately, but it’s worth the car trip!

Fleur Delicious Weekend Recipe

Since Fleur Delicious weekend is coming up next weekend, July 13 & 14th, we wanted to include one of our French-style recipes that we’ll be making for our guests:

Cheesy Apple Quiche

1 pie crust, unbaked
2 apples, peeled and sliced (I use Granny Smith)At the Bridgeford House B&B for Fleur Delicious Weekend
1-1/2 cups heavy whipping cream
1 cup shredded cheddar cheese
3 eggs
1 tsp cinnamon
2 tb sugar
2 tb butter

Saute apple slices in a large saucepan with the butter, sugar and cinnamon for about 5-10 minutes, until slices are tender. Meanwhile, whisk together the whipping cream and eggs until well blended. Place apples in the bottom of the pie crust and cover with the cheese. Pour egg mixture over apples and cheese. Bake in a preheated 325 degree oven about 35 minutes or until completely set. Let cool about 5 minutes before slicing and serving.

Serves 6

Simply Scrumptious Tea Room

While we always encourage our folks to park their car and walk the historic district during their stay with us, we do have some excellent restaurants out on Hwy 62 and one of those is the Simply Scrumptious Tea Room. They invite you to sit back, relax and be pampered in their charming dining room. Serving lunch each day Tuesday – Saturday, they offer a menu that is prepared fresh daily, with soup, salad, sandwiches, quiche and simply scrumptious desserts. The food is wonderful (their Chicken Salad is to die for!) and served elegantly in a beautiful setting (the windows of the dining room look out into the woods).

In addition to being connected to a wonderful antique shop filled with some really nice furniture finds (the Gingerbread Antique Mall), Simply Scrumptious also has a wonderful gift emporium filled with vintage and garden inspired treasures. Every time I’m in there I have to keep a watch on my pocketbook because I find such wonderful things. But if your mind is strictly on food, take a few minutes to look at their menu before you go so you’ll be prepared for their mouth-watering food.
So when you come to Eureka, it’s okay to get back in your car and drive to one of our great Hwy 62 restaurants. Make sure one of them is Simply Scrumptious and tell them Bridgeford House Bed and Breakfast sent you.

Buttermilk Pie

Okay, we don’t normally have pie for breakfast here at the Bridgeford House (although we probably would if you asked!), but we wanted to share this awesome (and easy) pie recipe that we bake all the time for the holidays:

Buttermilk PieFood at the Bridgeford House Bed and Breakfast

1 (9-inch) pie shell, unbaked
1/4 cup butter
2 cups (scant) granulated sugar
3 (rounded) TBs all-purpose flour
3 eggs, slightly beaten
1 cup buttermilk
1 tsp vanilla
Nutmeg to garnish surface of pie

Preheat oven to 350 degrees. Let eggs and buttermilk come to room temperature.

Cream butter and sugar; add flour, then eggs. Stir in buttermilk and vanilla, beating until smooth. Pour into unbaked pie shell; sprinkle top of pie with nutmeg. Bake 45 to 50 minutes until pie tests done when the tip of a knife is inserted in center; knife should come out clean.

Overnight Blueberry French Toast

French Toast Morning at Bridgeford House Bed and Breakfast Eureka Springs AR

 

 

 

 

 

 

 

 

 

We try to offer different recipes from time to time – Sam, our main breakfast cook, has a very short attention span – :) !

Therefore, here is a recipe to lusciousness:

12 slices day-old bread, cut into 1” cubes
2 (8 ounce) packages cream cheese, cut into 1” cubes
1 cup fresh blueberries
12 eggs, beaten
2 cups milk
1 tsp vanilla extract
1/3 cup maple syrup

Topping:
1 cup white sugar
2 tb cornstarch
1 cup water
1 cup fresh blueberries
1 tb butter

Lightly grease 9X13 baking dish. Arrange half of bread cubes in the dish, and top with cream cheese cubes. Sprinkle 1 cup blueberries over cream cheese and top with remaining bread cubes.
In a large bowl, mix the eggs, milk, vanilla extract, and syrup. Pour over the bread cubes. Cover and refrigerate overnight.
Remove the dish from fridge about 30 minutes before baking. Preheat over to 350 degrees F.
Cover with foil and bake for 30 minutes. Uncover and continue baking 25 to 30 minutes until center is firm and surface is lightly browned.
In a medium saucepan, mix the sugar, cornstarch and water. Bring to a boil. Stirring constantly, cook 3 to 4 minutes. Mix in the remaining 1 cup blueberries. Reduce heat and simmer 10 minutes, until the blueberries burst. Stir in the butter and pour over the baked French toast.
